Healthy Burrito Bowl

This is one of my go-tos, especially for lunch. It is easy to meal prep and even easier to reheat. The best part about this is it is incredibly versatile. You can add so many things to it and make it in so many different ways. You can make this into tacos, a salad (my preferred method), or a burrito. Here is my method for making my taco meat and rice, the rest is all up to you WW family.

Taco meat:

Ingredients:

- Ground Chicken or ground turkey (2 lbs)

- 1 tablespoon of taco seasoning

- 1 tablespoon of taco sauce

Directions:

  1. Spray a skillet lightly with your desired cooking spray (I use avocado oil). Bring to medium heat.

  2. Cook meat all the way through, it will be brown.

  3. Add your taco seasoning and taco sauce. Mix evenly and let cook for an additional 1-2 minutes.

Rice - Instant Pot

Ingredients

- 2 cups of of brown rice

- 1 3/4 cups of water

- 1/4 cup of vegetable broth

- A dash of olive oil (I seriously mean a dash)

Directions:

  1. Put all of these ingredients in your instant pot.

  2. Set the time for 22 minutes and let it naturally release.

Notes:

This recipe usually lasts me for about 5-6 days.

You can add veggies, taco shells, tortillas, anything your heart desires to this! My typical burrito bowl is lettuce, chicken/turkey, 1/2 cup of rice, 1/4 cup of black beans, and 1/4 cup of shredded cheese. It is so delish!
